There is nothing like cuddling up to a good book, read by dad. For those with young children, please add these to your library, if you don’t already have them. The messages they contain are quite important and I have found them to offer significant contributions to a growing mind.

 

STUFF TO EAT!

SWEET POTATO FRIES

Kids become so addicted to these yummy sweet potato fries that they wont last more than…well…hope you got some too, Pop! Filled with beta carotene and easy to make, a great activity to do together. Check out this simple recipe.

INGREDIENTS

2 medium sweet potatoes, peeled

2-3 tablespoons olive oil

1/2 teaspoon salt, plus extra for sprinkling

1/2 teaspoon fresh ground black pepper

Preheat oven to 425*F.  Cut sweet potatoes in wedges or like french fries.  Place wedges on large baking pan or cookie sheet. Pour over olive oil, and toss to mix.  Now sprinkle over brown sugar, salt, and black pepper. Toss to coat wedges. Spread out in a single layer. Place pan in oven and bake for 15 minutes, then take out and turn wedges over. Place back in oven and bake another 15-20 minutes, or until golden brown and crispy on the outside. Sprinkle with extra kosher salt to taste. The cooking time will depend on how big the wedges are. Enjoy!

*They are also good with other seasonings like ground cumin, chipotle powder, smoked paprika, Chinese five-spice, pumpkin pie spice, garam masala, Cajun, brown sugar or other seasonings.  Have fun and experiment!

Since our president is a POP, many dads want to take their kids to see the White House to witness this historic milestone! But there are also many other things to do and places to go in Washington DC with your kids! One such place is the Newseum!  Ranked by TripAdvisor as the No. 1 attraction in the nation’s capital, the Newseum is host to the NBC News Interactive Newsroom where you and your kids can record your own newscast, complete with cameras and teleprompters, at the “Be a TV Reporter” station. From July 1 through Sept. 5, 2011, youth visitors 18 and under get free admission to the Newseum with one paid adult admission.
